Ingredients
  • 2 Salmon fillets
  • 2 tablespoons White miso paste
  • 2 tablespoons Sugar
  • ¼ cup Mirin (Japanese cooking wine)
  • 2-3 Baby cucumbers (thin ones)
  • 2 Scallions
  • 1 tablespoon Japanese rice vinegar
  • 2 teaspoons Soy sauce
  • 2 tablespoons Mayonnaise
  • Sesame seeds
Method
  1. Pre heat oven to 185 C (350F)
  2. Lay fish fillets onto an oiled baking sheet
  3. Combine miso, mirin and sugar in a bowl
  4. Spread mixture onto fish
  5. Bake for 15 min (or until fish is cooked, and glaze is golden and bubbly)
  6. While fish is baking, combine sliced cucumbers, scallions, soy and vinegar
  7. Serve fish with cucumber salad and mayo on the side. Top salad with sesame seeds
