Moose Taco and Cloudberry Salsa

Ingredients
  • Gahkku bread
  • 500 millilitres Milk
  • 100 grams Butter
  • 25 grams Yeast
  • 50 millilitres Syrup
  • 1 teaspoon Salt
  • 100 millilitres Rye flour
  • Approx. 1 litre Wheat flour
  • Cloudberry salsa
  • 500 grams Cloudberries
  • 1 Red chilli - chopped
  • 1 clove Garlic - chopped
  • 1 tablespoon White wine vinegar
  • 1 tablespoon Sugar
  • Vinegar onions
  • 1 large Yellow onion - chopped
  • 100 millilitres White wine vinegar
  • 100 millilitres Sugar
  • 100 grams Butter
  • ½ teaspoon Salt
  • 700 grams minced Moose meat
  • 2 tablespoons Cooking oil
  • Salt and pepper
  • 100 grams Mache salad
  • 200 grams Gouda or Cheddar cheese
Method
  1. Fry the meat in a hot pan and season to taste.
  2. Serve the meat on Gahkku bread with cloudberry salsa, vinegar onions, salad and grated cheese

  2. Melt the butter and add the cold milk. Heat until the mixture is 37 C. Pour the mixture in a large bowl and add yeast, syrup and salt. Using your hand, work in the rye flour and the wheat flour until you get smooth dough. Set to rise under a towel for 30 minutes
  3. Use a rolling pin and make flat round cakes 2-3 mm thick and 20 cm wide. Bake directly in a hot and dry frying pan 2-3 minutes on each side

  2. Put all ingredients in a small pot and bring to the boil. Cool down before serving

  2. Put all ingredients in a pot and bring to the boil. Serve room tempered
