Ingredients
  • 2 cups Chicken stock
  • 4 Lemongrass stalks (bruised)
  • 6 Kaffir lime leaves (bruised)
  • 1 galangal (thinly sliced)
  • 1 kilogram Button mushrooms
  • 500 grams Enoki mushrooms
  • 500 grams Eryngi mushrooms
  • 500 grams Shimeji mushrooms
  • 500 grams Straw mushrooms
  • 2 tablespoons Nam prik pao
  • 2 kilograms Tiger prawns (deshelled and deveined, tail and head left on)
  • 1 cup Santan (Coconut milk)
  • ¼ cup Lime juice
  • ¼ cup Fish sauce
  • ¼ cup Coriander leaves (thinly sliced)
Method
  1. In a pot, bring chicken stock to a simmer. Add lemongrass, kaffir lime leaves, and galangal. Leave to infuse for 5 minutes
  2. Add mushrooms to the pot and cook for another 4 to 5 minutes.
  3. Add nam prik pao and fish sauce. Stir
  4. Add prawns and cook for 1 to 2 minutes until slightly firm
  5. Add santan to the pot. Bring to a simmer, then take off heat
  6. Season with lime juice and fish sauce
  7. Add coriander leaves and stir. Garnish with a bit more coriander leaves. Serve
