Mushrooms, Bacon, Goat’s Curd

Ingredients
  • 4 field Mushrooms( stalks removed and halved)
  • 4 rashers of smoky Bacon
  • 100 grams Goat cheese
  • 1 handful of flat leaf Parsley
  • 1 Fennel bulb
  • 1 Lemon
  • Salt, Pepper
  • 4 slices of Garlic
  • 3 tablespoons Olive oil
Method
  1. Brush the mushrooms, with a little oil, season with salt and garlic, BBQ for 1 – 2 minutes
  2. BBQ the bacon until crispy
  3. Shave the fennel into a bowl, add the herbs and dress with oil, lemon juice, salt and pepper, add the mushrooms and bacon
  4. Top with chunks of goats cheese
