Mussels, Clams, Tomatoes
Try this quick and easy mussel recipe by Darren Robertson from Darren Robertson's Charcoal Kitchen.

  • Yield 1 serving
  • 500 grams of Mussels and Clams
  • 1 clove of Garlic
  • 1 Lemon (halved)
  • 2 teaspoons of chopped Ginger
  • 1 large Red chilli
  • 100 grams of Tomatoes
  • 1 tablespoon Olive oil
  • Two 80 x 80cm piece of tin foil
  1. BBQ the lemon and tomatoes until tomatoes blistered
  2. Leaving out half a lemon for later, place all the ingredients in the center of the foil, wrap into a tight package and BBQ on top of the hot coals for 4 – 6 minutes
  3. Remove, open squeeze lemon over the top and enjoy immediately
