
Mussels, Clams, Tomatoes

Ingredients
- 500 grams of Mussels and Clams
- 1 clove of Garlic
- 1 Lemon (halved)
- 2 teaspoons of chopped Ginger
- 1 large Red chilli
- 100 grams of Tomatoes
- 1 tablespoon Olive oil
- Two 80 x 80cm piece of tin foil
Method
- BBQ the lemon and tomatoes until tomatoes blistered
- Leaving out half a lemon for later, place all the ingredients in the center of the foil, wrap into a tight package and BBQ on top of the hot coals for 4 – 6 minutes
- Remove, open squeeze lemon over the top and enjoy immediately
