Mussels with Lovage & Tomatoes

  • 1 kilogram Blue Mussels
  • 1 tablespoon Butter
  • 1 clove Garlic
  • 1 fresh Onion or 2 Spring onions
  • 300 millilitres light Lager Beer
  • 2 Leaves lovage
  • 400 grams small Tomatoes in different colours
  • Salt
  1. Clean the mussels and throw away any dead or damaged ones
  2. Peel and chop the garlic and onion
  3. Fry the garlic and onion in a very hot pot for 10 seconds. Add the mussels and the beer. Put a lid on the pot immediately and cook the mussels for 3-4 minutes
  4. Chop the lovage and cut the tomatoes in large pieces
  5. Add tomatoes and lovage to the hot mussels and salt to taste
  6. Serve immediately
