Ingredients
  • 500 grams Mutton on the bone, cut into cubes
  • 10 Shallots
  • 2 cloves Garlic
  • 2 centimetre Ginger
  • 1 Green chilli for garnish
  • 4 tablespoons Curry powder
  • 1 can Tomatoes
  • 1 Cinnamon stick
  • 1 teaspoon Cloves
  • 1 Star anise
  • 1 teaspoon Fennel seeds
  • 2 sprigs Curry leaves
  • 1 Carrot, chopped into large cubes
  • 1 large Potato, chopped into large cubes
  • 1 litre Water
  • 4 tablespoons Vegetable oil
  • Salt and Sugar to taste
Method
  1. In a big pot, add oil and spices (cinnamon, cloves, fennel, curry leaves) and fry until fragrant
  2. Add sliced shallots, garlic and ginger and fry until fragrant
  3. Add curry powder and a bit of water for a few minutes on a low heat, until curry turns the oil red. Then, add tomatoes and cook for 10 minutes
  4. Add chunks of mutton and about 1/2 litre of water and a nice big pinch of salt and let it simmer for at least 45 minutes until mutton is tender
  5. 30 minutes before curry is done, add carrots and potatoes
