  • 2 cups cooked overnight Rice
  • 100 grams Squid
  • 100 grams Chicken breast
  • 100 grams Prawns
  • 8 Shallots, sliced
  • 2 cloves Garlic, minced
  • 2 Red chillies
  • 1 tablespoon Chilli paste
  • 4 tablespoons Fish sauce
  • 1 cup Green peas/ Green beans
  • 1 cup Leafy Vegetables
  • 1 Spring onion
  • 2 Eggs
  • 4 tablespoons Oil
  • Salt
  1. In a pan, add in some oil and fry shallots, garlic, red chillies and chilli paste until fragrant for 5 minutes
  2. Add in chicken and fry for 3 minutes before adding squid, prawns and green peas/green beans and leafy vegetables. Season with fish sauce and salt
  3. Push ingredients to one side of the pan and crack 2 eggs on the other side. Scramble the eggs a little before folding it into the rest of the ingredients
  4. Add on cooked rice and stir fry for at least another 8 minutes and at the last second, add in a sprinkling of chopped spring onion
