  • 100 grams Cabbage
  • 3 grams green Spring onion
  • 40 grams Pork back rib
  • 2 tablespoons Tenkasu (Tempura flakes)
  • 1 tablespoon red pickled Ginger
  • 250 grams Flour
  • 300 millilitres Dashi
  • 15 grams Yam
  • 1 Egg
  • 60 grams Sauce (for Okonomiyaki)
  • 1 tablespoon Mayonnaise
  • 2 tablespoons dried Bonito
  • 1 tablespoon Green laver
  • 2 tablespoons Vegetable oil
  1. Slice the cabbage and green spring onion
  2. Grate the yam thinly
  3. Sift flour into a bowl and mix with water. Add dashi and yam into the bowl and continue mixing
  4. Mix the batter with chopped cabbage, green spring onion, tenkasu, red pickled ginger, and egg
  5. Put vegetable oil on the frying pan and cook the pork
  6. Add the batter on top of the pork and press it down on the mound using a spatula to flatten out the top. Push the edges back towards the center to make a round pancake that has the same thickness from edge to edge. Cover with lid and cook for 3 minutes
  7. When both sides are cooked, top Okonomiyaki with Okonomiyaki sauce, mayonnaise, dried bonito and green laver
