Onde-Onde No-Bake Cheesecake

  • 600 grams Cream cheese
  • 280 millilitres Whipping cream
  • 100 grams Icing sugar
  • Zest of 1 Lime
  • 250 grams Digestive biscuits
  • 100 grams Butter
  • 10 Pandan leaves
  • 50­ - 70 millilitres Milk
  • 1 cup Gula melaka
  • ½ cup desiccated Coconut or grated Coconut
  1. Blend the pandan leaves with a little milk, and strain to get pandan juice
  2. Crush the digestive biscuits, mix with melted butter and press into the base of the cake tin
  3. Whip the cream cheese with half the icing sugar and the pandan juice
  4. Whip the cream with half the icing sugar until fluffy, then fold into the cream cheese
  5. Scoop into cake tin and set in fridge for at least 4 hours
  6. Melt the gula melaka in a saucepan, cook until syrupy and allow to cool
  7. When ready to serve, drizzle the gula melaka over the edge of the cake and top with some grated or desiccated coconut
