One Pan Lemon Baked Chicken

  • 1 Chicken, cut in pieces (thighs, breast, drumsticks)
  • 1 packet of Cherry tomatoes
  • 1 whole head of Garlic
  • 1 Lemon
  • Fresh rosemary or thyme
  • Butter
  • Olive oil
  • 6 Red skin potatoes (or other small potatoes)
  • 10-12 Basil leaves
  • Salt
  • Black pepper
  • Chicken stock
  1. Pre heat oven to 180 C
  2. Season chicken pieces with salt and pepper
  3. Cut ends of head of garlic
  4. Slice lemon into rounds
  5. Cut potatoes in halves or quarters
  6. Put everything in a baking dish
  7. Drizzle everything with olive oil and coat evenly
  8. Rearrange ingredients to form even layer
  9. Scatter thyme or rosemary over top
  10. Brush some butter on the chicken pieces
  11. Bake in oven for 25 min
  12. Turn chicken, bake for another 15-20 min
  13. Remove from oven and arrange chicken and veggies on plate (leave garlic cloves in pan)
  14. Mash garlic and mix with juices in pan, spoon over chicken
  15. Top with basil leaves
