One Pot Chicken Dish

Ingredients
  • Paste:
  • 3 centimeters ginger, roughly chopped
  • 3 lime leaves
  • 6 garlic cloves, roughly cut
  • 1 chili padi, roughly cut
  • 1 teaspoon oil
  • 8 upper thigh of chicken
  • ½ red onion
  • 2 carrots
  • 7 small potatoes, cut into half
  • Salt, to taste
  • Black pepper, to taste
  • Sugar, to taste
  • Thyme
  • ½ lemon, juiced
Method
  1. Blend ginger, lime leaves, garlic, chili padi, and oil to make a paste
  2. Marinate the chicken thighs with the paste. Put it in a fridge for an hour.
  3. After an hour, brown the chicken in a pan
  4. Put the carrots, potatoes, red onion in the oiled oven proof dish
  5. Season it with salt, black pepper, sugar and thyme
  6. Put the browned chicken thighs on top
  7. Add some black pepper, salt, sugar and thyme
  8. Bake it in an oven at 180 C for 50 minutes
  9. Add a bit of lemon while it's still hot
  10. Ready to serve
