One Pot Spicy Asian Tuna Pasta

  • Yield 3 servings
  • 1 packet Spaghetti
  • 2 cans of Tuna
  • 3 chopped Garlic
  • 3 chopped Bird's eye chilli
  • 1 can chopped Tomatoes
  • 4 cups Water
  • 1 stick Lemongrass thinly sliced
  • 1 cm Ginger thinly sliced
  • 1 small Ginger flower thinly sliced
  • Salt, Pepper and Sugar to taste
  • For Garnish
  • Fresh Mint leaves
  • 1 small Red onion sliced thinly
  • Wedges of Lime
  1. In a large wok, add in pasta, tuna, canned tomatoes, chopped garlic, chilli, lemongrass, ginger flower, generous pinch of salt, ground black pepper and a pinch of sugar along with 4 cups of water
  2. Turn the wok on and let the pasta cook in its own pasta sauce for 8 to 10 minutes until pasta is cooked. Taste and adjust accordingly
  3. Garnish cooked pasta with fresh mint leaves, sliced red onions and lime wedges
