Oyster Mushroom Chicken

  • 1 tablespoon Oil
  • 1 centimetre Ginger, sliced
  • 2 cloves of Garlic, minced
  • 6 tablespoons Oyster sauce
  • ½ Chicken, cut into 8 pieces
  • 1 cup of dried Shiitake mushroom
  • 1 Potato, cut into cubes
  • 1 cup Water
  • 1 tablespoon Cornflour
  • Salt, Pepper and Sugar to taste
  • Red chillies, for garnish
  1. In a wok, add some vegetable oil and fry up garlic and ginger until fragrant
  2. Add oyster sauce and a few tablespoons of water. Stir for a couple of minutes before adding the chicken
  3. Stir fry chicken for 5 minutes until slightly brown before adding mushrooms and potatoes. Fry for a couple of minutes before adding the remainder of the water
  4. Season with salt and sugar. Let it simmer until chicken is tender
  5. For a thick silky gravy, mix the cornflour with some water and pour into the wok
