Pan Fried Cod with Sambal

  • Cod
  • 4 Cod fillet (skinless, 120 grams each)
  • Sambal (Chilli paste)
  • 150 grams dried Red Chilli (soaked and drained)
  • 200 grams fresh Red Chilli
  • 12 Garlic cloves
  • 7 Shallots
  • 1 teaspoon Belacan (Shrimp paste) (toasted)
  • 1 Ginger
  • 200 grams Gula melaka (Palm sugar) (grated)
  1. Cod:
  2. Season the cod with salt and pepper. Pan fry with oil until golden brown
  3. Add in butter to the pan and baste the fish continuously for 2-3 minutes on each side until cooked
  1. Sambal:
  2. Combine all ingredients into a blender and blend with some water
  3. Transfer the mixture into a pot with some hot corn oil and cook down the sambal paste while stirring constantly until the oil splits and the paste becomes a caramelised dark colour Season with salt
