Ingredients
  • 300 grams Coconut meat, grated
  • 150 grams Pork belly ( cut into strips)
  • 150 grams Shrimps, shelled
  • 75 grams Red onion, sliced
  • 30 grams Garlic, minced
  • 100 grams Carrot, sliced into thin strips
  • 75 grams Sitaw or String beans, sliced 1 inch long diagonally
  • 150 grams Cabbage, shredded
  • 200 millilitres Coconut water
  • 30 millilitres Patis or Fish sauce
  • To taste salt
  • Garnish Kinchay or Chinese parsley
  • 30 millilitres Cooking oil
  • Calamansi
Method
  1. Sauté garlic in hot oil. Add onion
  2. Then, stir in shrimps and pork, season with fish sauce
  3. Cook for another 3 minutes, then pour In coconut water
  4. Simmer for 10 minutes and add vegetables
  5. When vegetables are almost done, set aside 1 cup for topping
  6. Add grated buko in pan, stir and cook for 5 minutes
  7. Arrange pancit buko on a plate and spread the remaining sautéed mixture on top
  8. Garnish with kinchay and serve with patis and calamansi halves
