Papuan Yellow Mackerel Soup

Ingredients
  • Bumbu (Yellow Paste):
  • 7 shallots, cut
  • 4 garlic, cut
  • 2 centimeters turmeric, roughly cut
  • 2 centimeters galangal, roughly cut
  • 6 lime leaves
  • 2 lemongrasses, cut the inside part roughly
  • 8 candle nuts, roasted
  • 4 tablespoons oil
  • Fish Roll:
  • 100 grams mackerel fillet
  • 100 grams lobster
  • Salt, to taste
  • Pepper, to taste
  • Sugar, to taste
  • 1 tablespoon oil
  • Soup:
  • 500 milliliters fish broth
  • 2 bay leaves
  • 2 lime leaves
  • 4 baby starfruits, cut
  • 15 Daun Kemangi (Indonesian basil leaves)
Method
  1. Blend Bumbu: shallots, garlic, turmeric, galangal, lime leaves, lemongrasses, candle nuts and oil. Set it aside
  2. Roll a bit of the Bumbu (Yellow Paste) and lobster inside the mackerel.
  3. Wrap it with a twine
  4. Season it with salt, pepper, and sugar
  5. Brown the side and the edges of the fish roll in an oiled pan. Set it aside
  6. Using the same pan, cook the remaining Bumbu until it's fragrant and the color changes into a bit darker
  7. Put in lobster head, bay leaves, lime leaves, baby starfruits. Cook it on medium heat, let it simmer about 30 minutes
  8. 5 minutes before it's done, put in the fish roll
  9. Season it with salt, sugar, and pepper
  10. Add some Indonesian basil leaves. Cook it for 5 more minutes
  11. 11. Ready to serve
