  • 2 tablespoons Unsalted Butter
  • 3 small shallots, sliced
  • Kosher Salt and freshly Ground Black Pepper
  • One 14-ounce bag frozen Peas, thawed
  • 2 tablespoons freshly squeezed Lemon juice
  • ¼ cup grated Parmesan
  1. Melt the butter in a medium skillet over medium heat. Add the shallots and a pinch of salt and cook until the shallots are soft and translucent, about 4 minutes
  2. Stir in the peas and 1/2 teaspoon salt and cook until the peas are soft but still bright green, 2 to 3 minutes. Add the lemon juice and toss. Remove from the heat and stir in the Parmesan and a generous pinch of black pepper. Serve hot
