Ingredients
  • 125 millilitres / 4 fl oz Vegetable oil
  • 2 tablespoons / 1 oz Coriander powder
  • 2 tablespoons / 1 oz Fennel powder
  • 2 tablespoons / 1 oz Cumin powder
  • 2 tablespoons / 1 oz Black pepper, finely ground
  • 1000 grams / 2 pounds 3 oz Beef, cut into chunks
  • 50 millilitres / 1½ fl oz Coconut milk (Santan Cair)
  • 2 tablespoons / 1 fl oz Tamarind juice (Assam Juice) - mix Tamarind Pulp with hot water, strain
  • 8 tablespoons / 4 oz roasted, pounded desiccated Coconut (Kerisik)
  • 6 tablespoons / 3 oz Sugar
  • 1 Cinnamon Bark (Kulit Kayu Manis)
  • 2-3 Star Anise
  • Handful of Cardamom Pods
  • Handful of Cloves
  • Salt to taste
  • Paste Ingredients - to be finely grounded
  • 15 Shallots (Red Onion), peeled
  • 6 Garlic cloves, peeled
  • 2 cm / 1 inch Ginger, peeled
  • 1 tablespoon roasted Shrimp Paste (Belacan)
  • 30 dried Chillies (Cili Kering) - softened in hot water, drain
  • Cup water
Method
  1. Heat vegetable cooking oil in wok. Stir-fry cinnamon, star anise, cardamom pods and cloves till fragrant
  2. Add in paste and simmer till oil surfaces
  3. Add in meat, coat well with gravy, and simmer for another 1-2 minutes.
  4. Mix in coriander powder, cumin powder, fennel powder, black pepper and coconut milk
  5. Lower heat and simmer for 30 minutes, or till meat becomes tender
  6. When the gravy thickens, add in tamarind juice, roasted, pounded desiccated coconut
  7. Stir well
  8. Season dish with salt and sugar, to taste
