Persian-style Soft Scrambled Eggs with Feta & Dill

  • 4 good quality Eggs
  • 4 tablespoons crumbled Feta cheese
  • Sea salt
  • Black pepper
  • Fresh dill
  • Extra virgin olive oil
  1. Heat a non-stick pan on low
  2. Crack eggs into a bowl and whisk for 30 sec
  3. Season eggs with pinch of sea salt
  4. Place about 1 tablespoonp olive oil into the pan and swirl to coat
  5. Pour eggs into pan and begin stirring
  6. Add feta before eggs begin to set. Keep stirring constantly
  7. Eggs will be done in a matter of 1minute
  8. Plate and top with a few extra drops of good olive oil and fresh dill

  2. Finished product should be very creamy and wet. Eggs barely set
