  • 250 grams Fresh water Shrimps, finely minced
  • 400 grams Young coconut, grated
  • 45 grams Garlic, minced
  • 1 teaspoon Brown sugar
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper, ground
  • As needed Kamamba leaves
  • As needed Banana leaves
  • 500 millilitres Coconut water
  1. Combine shrimp with grated coconut, garlic, sugar, salt and pepper
  2. Divide mixture into 6 portions. Place 1 portionof mixture in kamamba leaf, wrap then repeat with banana leaf
  3. Secure the banana wrapped pinais with a string then do the same for the remaining ingredients
  4. Arrange wrapped shrimp mixture in a saucepan Pour coconut water. Boil until shrimps are cooked
  5. Pan fry or for smoky flavor, grill the pinais after boiling it in the coconut water
  6. Drain from broth. Untie and remove the banana leaf and serve hot
