Pineapple Fried Rice - Khao Pad Sopparot ข้าวผัดสับปะรด

Ingredients
  • 1 whole Pineapple (optional)
  • 4-6 Pineapple cubes
  • 4 cups Rice
  • 300 grams Shrimp
  • 300 grams Sausage or Ham
  • 1 cup Black Raisin
  • 1 cup Green Peas
  • 1 tablespoon Yellow Curry powder
  • 2 tablespoons Soy sauce
  • 1 teaspoon Salt
  • 3 tablespoons Vegetable oil
  • 1 cup Floss (Beef/Pork/Chicken)
  • 1 cup Cashew nuts
  • 2 cloves Garlic, chopped
  • 1 Spring Onion, chopped
Method
  1. Heat the pan on medium heat. Add oil and when it’s hot, add garlic, shrimp and sausage. Stir until almost cooked
  2. Add rice, green peas and raisins. Toss until the oil coats the rice
  3. Season with soy sauce, salt and yellow curry powder
  4. Once cooked, turn off the heat and add the chopped spring onions and pineapple. Toss all the ingredients well
  5. Serve in a pineapple bowl (a regular bowl is fine too) and sprinkle the floss and cashew nuts
