
Plums, Spices, Mascarpone

Ingredients
- 8 Plums
- 100 grams Mascarpone
- Zest of half a Lime
- 1 tablespoon shredded Mint leaves
- Sugar syrup
- 2 Cinnamon stick
- 6 Cloves
- 2 Star anise
- 500 millilitres Water
- 250 grams Caster sugar
Method
- Place all this into a sauce pan bring to a boil and simmer of 10 minutes
- Cut the plums in half and lightly poach in the sugar syrup for 3 minutes
- Remove and char on the BBQ for 1 – 2 minutes to caramelize
- Mix the mascarpone in a bowl with the lime and mint
- Pop the plums in a bowl with Mascarpone on the side and pour over a little extra syrup for good measure
