Plums, Spices, Mascarpone

Ingredients
  • 8 Plums
  • 100 grams Mascarpone
  • Zest of half a Lime
  • 1 tablespoon shredded Mint leaves
  • Sugar syrup
  • 2 Cinnamon stick
  • 6 Cloves
  • 2 Star anise
  • 500 millilitres Water
  • 250 grams Caster sugar
Method
  1. Place all this into a sauce pan bring to a boil and simmer of 10 minutes
  2. Cut the plums in half and lightly poach in the sugar syrup for 3 minutes
  3. Remove and char on the BBQ for 1 – 2 minutes to caramelize
  4. Mix the mascarpone in a bowl with the lime and mint
  5. Pop the plums in a bowl with Mascarpone on the side and pour over a little extra syrup for good measure
