Prawn and Avocado Summer Rolls

  • 4 sheets Vietnamese spring roll wrappers
  • 200 grams cooked Prawns, halved lengthwise
  • 2 Avocados, sliced thinly
  • 1 Carrot, julienned
  • 1 cup finely sliced Lettuce or Cabbage
  • Sauce:
  • 3 tablespoons Fish sauce
  • 6 tablespoons Lime juice
  • 2 tablespoons caster Sugar
  1. Mix the sauce ingredients together and stir till combined
  2. The summer rolls have to be prepared one at a time, so get a bowl of warm water, and dunk one spring roll wrapper in until it has softened and become transparent
  3. Lay it on a plate lined with cling film, and fill the wrapper with lettuce, carrot, prawn and avocado. Fold in the two sides on the left and right, then roll up the summer roll. Serve with the dipping sauce
