Prawns in Apple Basil Curry

  • 3 tablespoons grape seed oil
  • 20 large prawns, peeled, de-veined and tails removed (540g)
  • A pinch of salt
  • A pinch of pepper
  • 2 tablespoons butter
  • 1 onion, minced
  • 2 tablespoons minced ginger
  • 2 cooking apples, peeled, cored and sliced thinly
  • 2 teaspoons garam masala
  • 1 teaspoon coriander seeds, crushed
  • ½ teaspoon turmeric
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red Chilli pepper
  • ½ cup chicken stock
  • 1 cup apple cider
  • ½ cup coconut milk
  • 1 small bunch of fresh basil leaves, stems removed
  • Sprigs of basil for garnish
  1. Add oil to a large skillet and when it is hot add the shrimp, season with salt and pepper and sauté until they turn bright red and edges are golden, about 3-5 minutes
  2. Remove and keep warm
  3. Add butter to the shrimp pan and when it begins to foam add the onion, ginger and apple slices
  4. Cook until the apples are caramelized, about 10 minutes, stirring to break up the apple chunks
  5. Add spices and salt and cook for 1 minute
  6. Pour in the apple cider and stock and let reduce for 10 minutes or until reduced by one third and then pour in the coconut milk, stir well and continue to reduce until it is thick and coats the back of a spoon
  7. This should take about 3-5 minutes
  8. Add the shrimp and stir to heat through
  9. At the last minute stir through the basil leaves until they are just wilted and then serve the curry with rice and garnish with fresh basil sprigs
