  • 1 Pomfret
  • 1 large bowl Salt water
  • 1 large bowl Clear water
  • 1 whole Ginger
  • 2 tablespoons Garlic
  • 2 tablespoons Vegetable oil
  • 500 grams Spring onion
  • 2 tablespoons Soy sauce
  1. De-scale the fish
  2. Butterfly the fish by slicing it gently on either side of the fin along its spine and up to its backbone, but keep the fish spine intact at the same time. What you will get is a fish that is split into two along its spine
  3. Dip in salt water to remove the blood, and to lessen the fishy smell
  4. Meanwhile, slice the ginger. Place the ginger on the plate, followed by the fish on top of it, and place a spare spoon between each side of the fish. This is to open up the fish and allow steamer’s heat to reach the meat more easily Place it in the steamer for 7 minutes
  5. Pour the oil and garlic. Fry it till the garlic is golden brown
  6. Drizzle the soy sauce on the fish
