Quails and Noodle Salad

  • 4 x Quails
  • 4 x thin Lemongrass stalks
  • 4 Lime leaves shredded
  • 1 tablespoon of Galangal grated
  • 4 tablespoons toasted Chilli paste marinade
  • 2 teaspoons of Sesame oil
  • 1 tablespoon of Fish sauce
  • A small handful of sweet Basil
  • A small handful of Saw Tooth coriander or normal Coriander
  • Noodle Salad
  • Desert sp of roasted red Chilli paste
  • 1 Birds eye Chilli chopped
  • 3 spring Onions finely chopped
  • 3 thai shallots finely sliced
  • 3 teaspoons Fish sauce
  • Juice of one Lime
  • Handful of mixed herbs
  • 50 grams noodles (cooked)
  • 50 grams honey roasted Peanuts
  • Crispy shallots
  1. Chilli paste Marinade
  2. Simply roast dried red Chillies, then fry garlic and shallots, and blitz them all together in a food processor along with dried shrimps, lime-juice and palm sugar
  3. Mix the herbs -saw tooth coriander and sweet basic and grated galangal and fish sauce and Sesame Oil together in a bowl with your hands and stuff into the cavity of the quail
  4. Gently peel the skin back and put ½ the chilli paste marinade under the skin and massage into the flesh and rub the remaining paste over the birds
  5. Secure the quails cavity with a lemon grass stalk to hold in the stuffing and leave to marinade for as long as possible. At least 2-3 hours
  6. Then pop in a roasting tray and into the oven at 200c temperature for 20 mins
  1. Noodle Salad
  2. Put the chilli paste, chilli, spring onions, thai shallots, fish sauce, juice of one lime into a bowl and mix with your hands
  3. Add the noodles and peanuts and mix through and then top with crispy shallots
  4. Mix together and serve on a plate and top with a Quail
