Quick Cantonese Lo Mein

  • Bundles of Thin wonton noodles
  • 4 Eggs
  • 2 Scallions
  • 1 handful of Parsley
  • 4 teaspoons Sambal
  • 1 drizzle of Sesame oil
  • 4 teaspoons Soy sauce
  • 4 teaspoons Chinese black vinegar (or rice vinegar)
  1. Bring a pot of water to a boil
  2. Combine sambal, soy, vinegar. Set aside
  3. Fry each egg sunny side up
  4. Slice scallions diagonally
  5. Roughly chop parsley
  6. Cook noodles in boiling water for 30-40 seconds
  7. Divide noodles in bowls with a about a few teaspoons of reserved cooking water to loosen
  8. Spoon sauce over noodles, reserve a little for garnish
  9. Place a fried egg on top of noodles
  10. Sprinkle cilantro and scallions over egg, and top with remaining sauce
  11. Pierce the egg yolk, and enjoy at once!
