  • 1 Passionfruit
  • Dessert spoon Whipped Cream
  • 1 Egg white
  • 50 grams Caster Sugar
  • Salt

Whisk the white in a large bowl and gradually add the caster sugar until firm and silky smooth. Spread a little on a plate and grill with a blowtorch. Place the raspberries in a sieve and hold over some smoldering raspberry leaves Place onto the plate. Serve with a passion fruit, cream and a little salt
