Ingredients
  • 200 grams Beef Sirloin or Tenderloin (thinly sliced)
  • 4 Spring Onions
  • 20 grams Bean Sprouts
  • 2 Limes
  • 2 Salted Eggs
  • 1 tablespoon fried Shallots
  • 2 Shrimp Crackers
  • 10 grams Sambal (Chilli paste)
  • 2 litres Beef Stock
  • 50 millilitres Vegetable Oil
  • 4 Kaffir Lime Leaves
  • 2 Lemongrass
  • 6 Shallots
  • 5 cloves Garlic
  • 2centimetres Turmeric,
  • 3centimetres Galangal,
  • 3centimetres Ginger, charred
  • 2 large Red Chillies, charred
  • 1 tablespoon Coriander Seeds, toasted & ground
  • 1 teaspoon Salt
  • 1 teaspoon White Pepper
  • 1 teaspoon ground Cumin
  • 1 teaspoon Palm Sugar
  • 1 teaspoon Shrimp Paste
  • 1 teaspoon Tamarind Paste
  • 2 tablespoons Candlenuts
  • 2 pieces ‘keluak’ (Indonesian Black Nut), nut soaked with hot water
  • Garnish:
  • Bean Sprouts
  • 3 centimetres Ginger, shredded
  • 1 Lime leaf, very finely sliced
  • 1 Red Onion, cut into petals and pickled in Lime Juice
  • Sliced Chilli
  • 4 Shallots, shredded
  • Coriander Flowers
  • 2 tablespoons Hazelnuts, peeled and crushed
  • Lime
Method
  1. Char grill or gas char the ginger, galangal, Chilli and shallot
  2. Liquidize with the oil, coriander, lemon grass, keluak nuts, lime leaves, candlenuts, garlic until a smooth paste
  3. Fry the paste until fragrant add stock, bring to a boil, simmer and season with salt and pepper
  4. Pour the soup over the beef to cook and charred spring onions and Chilli
  5. Serve with crackers, sambal, salted egg, bean sprouts and fried shallots
