Rice based Chicken Stew

  • Yield 4 servings
  • 1 whole Chicken (chopped into 16 cuts)
  • 4 cloves of Garlic (chopped)
  • 1 inch piece of Ginger (sliced)
  • 1 cup fried Pork butt (bite-sized pieces)
  • ¼ cup Fish sauce
  • 1 litre Water
  • 1 cup Kamias (chopped)
  • 1 cup Annatto
  • 1½ cups Ground Rice
  1. In a large pot, add oil, garlic and ginger. Sauté for 5 minutes or until the garlic is browned
  2. Add the fried pork butt and fish sauce. Reduce the fish sauce to a syrup and add the chicken sauté for 6 minutes or until the chicken is browned
  3. Cover with water and add the kamias, annatto and rice. Simmer under a low heat for 35 minutes or until the chicken is cooked
