Ingredients
  • 2 bundles Thin rice noodles
  • 454 grams ground Chicken
  • 2 cloves Garlic
  • 1 inch Ginger
  • 1 teaspoon Cornstarch
  • 2 teaspoons Fish sauce
  • 1 Egg
  • 3 Green onions
  • Oil
  • 1 small Cucumber
  • 1 small Carrot
  • 4 stalks Cilantro and mint
  • 2 Red chillies (or to taste)
  • 2 Limes
  • 1 tablespoon Sugar
  • 1 cup Mung bean sprouts
Method
  1. Soak glass noodles in boiling water for 10 min
  2. In a large bowl, combine chicken, scallions, chilli, fish sauce, ginger, garlic and egg
  3. Mix well and form into small meatballs
  4. Fry meatballs until golden brown and cooked through
  5. Drain noodles and rinse in cold water
  6. In a small bowl, combine lime juice, sugar, fish sauce and toss dressing with glass noodles
  7. Slice carrots & cucumber into thin strips
  8. To serve place a bed of glass noodles in a shallow bowl, and top with 3-5 meatballs, sliced veggies, bean sprouts and mint/cilantro. Top with extra dressing
