Roast Potato Salad

Ingredients
  • 8-10 purple Sweet potatoes or Redskin potatoes
  • 5-6 stalks Dill
  • 3 stalks Parsley
  • 2 Shallots
  • 2 tablespoons grainy Mustard
  • 1 teaspoon Honey
  • 1 tablespoon Olive oil
  • 2 teaspoons White wine vinegar or Apple cider vinegar
  • 1 clove Garlic
Method
  1. Pre heat oven to 185 degrees C
  2. Cut potatoes into quarters (or bite size pieces) skin on
  3. Spread potatoes evenly onto 2 baking sheets
  4. Toss with olive oil and a little sea salt
  5. Roast in oven until golden brown (about 20 min)
  6. Meanwhile, chop garlic, shallots and herbs, then combine with rest of ingredients to make a dressing. Taste and adjust seasoning
  7. When potatoes are ready, let it cool slightly, and transfer to large bowl
  8. Toss with dressing and top with extra herbs to serve
