Roasted Garlic Vinaigrette
Try this quick and easy roasted garlic vinaigrette recipe by Bruce Lim from Tablescapes.

  • 2 heads Garlic
  • ½ cup Balsamic vinegar
  • ½ cup Vinegar
  • 1 cup Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  1. In an oven, roast garlic with olive oil and a little bit of salt for about 35 minutes. Be sure it is covered with foil
  2. After roasting, let it cool first before squeezing. When it cools down, squeeze it and put in a bowl
  3. Then add local vinegar, balsamic vinegar and the olive oil that you have used in roasting garlic because it has a full flavour
  4. You can add a little bit of regular olive oil also then whisk it. If you want to add a little bite to it, just add a little bit of pepper and a tiny bit of salt. If you don't have a local vinegar, you can substitute it with a cherry vinaigrette as it is really good
