Salted Egg Butter Prawn Pasta

  • Yield 2 servings
  • 2 Salted egg yolks, steamed and mashed
  • 1 clove Garlic, finely chopped
  • 10-12 peeled Prawns
  • 2 tablespoons Butter
  • ½ teaspoon Sugar
  • 60 millilitres Whipping cream
  • 1 Chilli padi (Bird’s eye chilli), chopped (optional)
  • ½ cup Basil leaves
  • 200 grams dried Spaghetti
  1. Cook the spaghetti in plenty of salted boiling water
  2. In a separate pan, melt the butter over a medium heat. Add the garlic and salted egg yolks. Stir to cook until the mixture is frothy
  3. Stir in the sugar and Chilli padi, if using. Drain the pasta, reserving some of the cooking water
  4. Add the cream to the sauce, then add the pasta and a little cooking water. Simmer to thicken the sauce
  5. Stir in the basil leaves, and serve
