  • Yield 2 servings
  • 4 pieces cleaned Squid tubes
  • 2 tablespoons pickled Chinese lettuce stems
  • 2 cleaned Salted duck eggs
  • 100 grams Spinach leaves
  • 2 tablespoons Fried curry leaves
  • 2 sliced Shallots
  • 2 cloves sliced Garlic
  • 1 Lime
  • 3 sprigs Corriander
  • 1 tablespoon soaked Dry shrimps
  1. Boil the salted duck eggs for 10 minutes, remove the shells and chop finely
  2. Chop the pickled lettuce
  3. Fry the curry leaves until fragrant in a pan, followed by the sliced garlic, dried shrimp and shallots and continue frying until lightly browned
  4. Slice the squid thinly and cook together with the ingredients in the pan
  5. Add in the spinach, chopped salted duck eggs, pickled lettuce, and sliced coriander
  6. Season with salt and pepper and the juice of 1 lime
