Ingredients
  • Stuffed Chicken
  • 100 grams Cooked rice
  • 3 tablespoons Sambal (Chilli) paste
  • 3 sprigs Coriander
  • 3 chopped Garlic
  • 4 Chicken breast
  • Starfruit Salad
  • 2 sliced Starfruit
  • 1 sliced Tomato
  • 2 sliced Shallots
  • 1 tablespoon toasted Pine nuts
  • 1 stalk sliced Spring onion
  • 2 stalks Ginger torch
  • 3 Lime
  • Sugar to taste
  • Extra virgin olive oil
Method
  1. Stuffed Chicken:
  2. Sauté the garlic until brown
  3. Slice the coriander thinly
  4. Combine with the cooked rice and mix in the sambal
  5. Season to taste
  6. Make a pocket with the chicken breast and stuff as much rice as you can into the pocket
  7. Season the chicken breast and pan fry until brown
  8. Bake in the oven at 160°C for 10 minutes
  1. Starfruit Salad:
  2. Combine all the sliced ingredients into a bowl
  3. Add in the toasted pine nuts
  4. Add in sugar, lime juice and salt to taste
  5. Pour in extra virgin olive oil to coat the salad lightly
  6. Allow to marinate overnight
