Sarah Benjamin's Chicken Adobo

  • 1 Chicken, cut into 8 pieces
  • 3 Bay leaves
  • 4 tablespoons Dark soy sauce
  • 3 tablespoons White vinegar
  • 5 cloves of Garlic, unpeeled but lightly crushed
  • 3 cloves of Garlic, roughly chopped
  • 1 cup Water
  • ¼ cup Vegetable oil
  • ½ tablespoon Sugar
  • Salt and Black pepper, to taste
  • Red chilli slices, to garnish
  1. Marinate the chicken with the dark soy sauce, vinegar, sugar, unpeeled garlic and bay leaves for 2 hours
  2. In a small pan, heat the vegetable oil over a medium heat. Add the chopped garlic and fry until golden brown
  3. Drain, reserving the oil and setting the fried garlic aside separately
  4. Add 5 tablespoons of the garlic-infused oil to a large pot over a medium heat
  5. Pour in the marinated chicken with all the marinade and aromatics
  6. Cover with just enough water
  7. Bring to a boil, then lower the heat and simmer for 45 minutes until the chicken is cooked. Season to taste with black pepper and salt
  8. Garnish with thick slices of red chilli and serve with plenty of steamed white rice
