Seared Fish with Pineapple and Coriander Salsa

  • 2 Fish fillets, such as Red snapper or Sea bass
  • ½ Pineapple, finely diced
  • 1 cup Cherry tomatoes, quartered
  • 1 Red onion, finely diced
  • 1 clove Garlic, finely chopped
  • 1 Japanese cucumber, finely diced
  • Juice of 2-3 Limes
  • Salt and Pepper for seasoning
  • ½ cup chopped Coriander
  1. Mix the pineapple, cucumber, onion, tomato, garlic, lime juice and coriander together
  2. Season with salt and pepper and set aside Season fish fillets with salt and pepper
  3. Heat up 2-3 tablespoons of vegetable oil in a frying pan, and sear the fish fillets for around 2 minutes on each side, until just cooked through
  4. Serve fish with the pineapple salsa on top
