Shanty Melt

  • Yield 6 servings
  • 6 Sea Shantys, or any vegetable and seafood bake
  • ½ french Baguette
  • 4 slices of Orange cheddar
  • ½ Red onion, thinly sliced into rings
  • 2 cloves Garlic
  • 2-3 tablespoon melted Butter
  • 4 tablespoons Mayonnaise
  • 2 teaspoons Smoked paprika (or regular paprika)
  1. Pre-heat oven to 180 C
  2. Slice baguette in ½ lengthwise to form a top and bottom
  3. Slice into 6 mini sandwiches
  4. Place butter and grated garlic clove into small pan, and melt
  5. Mix paprika into mayonnaise
  6. To assemble sandwiches, remove excess bread from inside, spread a thin layer of mayonnaise onto both sides, add a baked Shanty, top with a few rings of onion, and a slice of cheddar. Top the sandwich, and brush outside with garlic butter
  7. Repeat for the other sandwiches
  8. Bake in oven for 15 minutes, until cheese has melted
  9. Serve with a cool, crunchy salad
