Shrimp and Egg Fried rice with Spicy XO Sauce

  • Yield 4 servings
  • 2 cups cooked, Cold rice
  • 8-10 Shrimp, tails removed, cut into bite sized pieces
  • 3 tablespoons XO sauce (or to taste)
  • 2 Scallions, chopped
  • 2 cloves Garlic, chopped
  • 2 cm Ginger, chopped
  • 2 Eggs, beaten
  • 5 stalks of Gai lan or Choy sum (any chinese green)
  • 1 tablespoon Light soy sauce
  1. In a wide non-stick pan, heat oil on high, and add eggs; swirl until they are soft cooked, and remove from pan
  2. Add a touch more oil, and fry ginger and garlic for a few seconds
  3. Add chopped greens. Stir fry for 1 minute
  4. Add shrimp, stir fry for 20 seconds,
  5. Add soy sauce and XO sauce. Stir fry for 20 seconds
  6. Add rice, breaking it up in the pan
  7. When all is combined and hot, add eggs back in and stir fry for a few more seconds
  8. Serve with chopped scallions on top
