Ingredients
  • 2 Turkey legs
  • 200 grams Duck fat (enough to cover turkey legs)
  • Water to cover turkey legs
  • For cooking turkey legs
  • 80 millilitres Soy
  • 50 millilitres Honey
  • 3 cloves Garlic
  • 1 stick Cinnamon
  • 2 Cloves
  • 1 piece of Orange peel
  • 1 Star anise

  • 50 millilitres Honey
  • 20 millilitres Soy
Method
  1. Place the legs in a pot, cover with fat and all for leg cooking ingredients
  2. Slowly cook for 2 hours on a gentle heat, then leave to cool
  3. Take 100ml of cooking juices and reduce with honey and soy to form a syrup
  4. Remove the legs before serving and char the on the BBQ and glaze with syrup, and that’s it
