  • 5 Chicken legs
  • 100 grams Apple wood chips
  • Potato Rosti
  • 2 Russet potatoes
  • 100 grams room temperature Butter
  • 1 sliced Onion
  • Mushroom Ragout
  • 100 grams fresh Button mushrooms
  • 2 cloves sliced Garlic
  • 1 diced Onion
  • 3 sprigs Thyme
  • 200 millilitres White wine
  • 200 millilitres Cooking cream
  • 50 grams Butter
  1. Smoked Chicken:
  2. Debone the chicken thighs
  3. Place the wood chips into a pot and heat up on medium heat
  4. Place the chicken inside on a small wire rack or tin foil
  5. Cover and allow to smoke for 25 minutes
  6. Season the deboned chicken leg and pan fry with corn oil until fully cooked and browned on both sides
  1. Potato Rosti:
  2. Peel the potatoes and shred with a box grater using the large grater holes
  3. Squeeze out the excess moisture from the potatoes
  4. Incorporate the room temperature butter into the grated potatoes
  5. Press the grated potatoes down into a flat pancake in a non stick pan with some oil and cook until brown on both sides using medium heat
  6. Season with salt and pepper
  1. Mushroom Ragout:
  2. Slice the button mushrooms
  3. Sauté in oil and butter until brown
  4. Add in the sliced garlic and diced onions and cook for 5 more minutes and season lightly
  5. Add in the whole time and deglaze the pan with the white wine
  6. Allow to reduce for 3 minutes
  7. Pour in the cream and mix well
  8. Season to taste
