  • Smoked Chicken
  • 2 Chicken breasts
  • 150 grams Wood chips (soaked in water)
  • Salad Dressing
  • 4 tinned Anchovies
  • 4 Garlic cloves (chopped finely)
  • 3 Shallots (diced)
  • 1 tablespoon Dijon mustard
  • 2 Lemon
  • 2 hard boiled Eggs (grated)
  • 300 millilitres Olive oil
  1. Smoked Chicken:
  2. Place soaked wood chips at the base of a pot Season the chicken with salt and pepper. Place chicken into a metal Chinese steamer and place over the wood chips
  3. Heat up the wood chips until smoking point and smoke the chicken for 15-20 minutes
  4. Remove the chicken breasts and rub with some oil. Continue to cook in a preheated oven at 140 degrees Celsius until internal temperature of the chicken reaches 70 degrees Celsius
  1. Salad Dressing:
  2. Place the shallots, garlic, mustard, anchovies, zest and juice of 2 lemons and the grated hard boiled eggs into a bowl and mix well until a paste like consistency
  3. Slowly drizzle in the olive oil to emulsify and season to taste. Adjust acidity if necessary
  4. Use dressing to coat any personal choice of salad greens
