Ingredients
  • 5 scallops
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • Water
  • 1 onion, cut it roughly
  • 2 tablespoons oil
  • 2 garlic cloves
  • 225 grams of cooked sweet corn (1 cup=237 ml)
  • 225 grams of popcorn (1 cup=237 ml)
  • 237 milliliters of fish stock (1 cup)
  • 237 milliliters of milk (1 cup)
  • 4 tablespoons of butter
  • Salt, to taste
  • Pepper, to taste
  • Wood chips
  • 1 slice of beef bacon, fried, for serving
  • Truffle oil, for serving
  • Black pepper, for serving
  • Caviar, for serving
Method
  1. Popcorn Sauce:
  2. Sauté the onion and garlic
  3. Put in cooked sweet corn and popcorn
  4. Mix everything together
  5. Add fish stock, then milk, and butter
  6. Let it simmer for a while
  7. Season it with salt and pepper
  8. Wait until it’s warm
  9. Blend it
  1. Smoking method:
  2. Put the smoking chips in a pan
  3. Put a strainer on top of the smoking chips
  4. Sprinkle some water, so it doesn’t burn
  5. Wait until the smoke appears
  6. Put in the scallops for a few minutes
  1. Plating:
  2. Put the popcorn sauce in a plate
  3. Add beef bacon
  4. Put the smoke scallops on top of the beef bacon
  5. Add a bit of truffle oil, black pepper, and caviar.
  6. Ready to serve
