Ingredients
  • 6 Duck Eggs
  • 3 cups Vegetable oil
  • ½ cup fried Shallot flakes
  • ¾ cup Palm sugar
  • 3 tablespoons Fish sauce
  • ½ cup Tamarind juice
  • ¼ cup Water
  • Fried dried Thai Chilli and Coriander for garnish
Method
  1. Put duck egg in boiling water for 5 minutes. Then place it in icy cold water
  2. Peel the egg and set aside
  3. Deep fry the eggs in hot oil. Keep moving the egg until the skin turns to an even golden brown
  4. In a separate pan, prepare the sauce. Heat some oil and add palm sugar, fish sauce, tamarind juice and some water. Simmer until it thickens
