Soy and Chilli Bean Beef Stew

  • 2 Garlic cloves, crushed
  • 2 inch piece fresh root Ginger, peeled and sliced
  • 1 red Chilli, de-seeded and chopped
  • 1 Onion, sliced
  • 2 medium Carrots, cut into 2 centimetre thick slices
  • 1 kilogram braising Beef, cut into large chunks
  • 1 litre vegetable stock
  • 2 tablespoons Chilli bean paste
  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 2 teaspoons brown sugar
  • 1 spring Onion, sliced
  • 1 small handful fresh Coriander, sliced
  • Steamed buns to serve

Put all the ingredients, except the spring onion and coriander into a large pan and bring to the boil.  Turn the heat down to low, cover the pan and simmer for 2 hours. Garnish with the spring onion and coriander and serve with steamed buns
