Soy Fried Peppery Chicken (Ayam Goreng Kicap Lada Hitam)

  • 600 grams Chicken drumsticks
  • 4 tablespoons light Soy sauce
  • 4 tablespoons Oyster sauce
  • 2 tablespoons sarawakian Black pepper
  • 1 tablespoon sarawakian White pepper
  • 2 chopped up Garlic
  • 1 centimetre Ginger
  • 1 medium Shallot
  • 2 cups Cooking oil
  • Sea salt and Brown sugar
  1. In a blender, blend onions, garlic and ginger
  2. Wash chicken drumsticks, pat dry and add in big mixing bowl
  3. In the same big bowl, add in blended items, along with black pepper, white pepper, light soy sauce, oyster sauce, salt and sugar and marinate for at least 2 hours (over night is better)
  4. In a pan, add in cooking oil and heat up oil until hot and shallow. Fry chicken until brown and keep turning for at least 6 - 8 minutes
  5. Once brown and cooked through, remove chicken and place on kitchen towel
  6. Eat with hands
