Soya Jelly Penne With Fried Egg and Prawns

  • Soya Jelly Penne
  • 400 grams Water
  • 100 grams Soya sauce
  • 15 grams Agar agar powder
  • Fried Egg And Prawns
  • 8 Tiger prawns (shelled)
  • 2 whole Eggs
  • 2 Red chilli (sliced)
  • 3 Garlic cloves (sliced)
  • 2 Shallots (sliced)
  • 1 Ginger (julienne)
  • 2 stalks Spring onions (sliced)
  • 2 Lime
  1. Soya Jelly Penne:
  2. Combine the water and soya sauce into a pot and bring to a simmer. Dissolve in agar agar powder and mix well. Allow to cool to 50 degree Celsius
  3. Dip in a chilled sharpening rod into the mixture for 3 seconds
  4. Remove and allow the mixture to set on the rod
  5. Carefully remove and cut into 'penne' shaped pasta
  1. Fried Egg And Prawns:
  2. Saute the garlic, ginger and shallots until aromatic and lightly browned. Add in the prawns and cook for another 3 minutes at medium heat
  3. Crack the eggs into the pan with the prawns and stir until cooked
  4. Add in lime juice, red Chilli and spring onions Season to taste
