Spiced Baked Cod with Caper Butter

  • Marinade:
  • 2 tablespoons Olive oil
  • ½ tablespoon Chilli powder
  • 1 teaspoon Cumin seeds
  • ½ tablespoon Dried cilantro
  • 1-inch Ginger, grated
  • Cod:
  • 200 grams Cod fillet
  • Sea salt flakes, to season
  • Black pepper, to season
  • 1 tablespoon Corn flour
  • Sauce
  • 2-3 tablespoon Butter
  • ½ tablespoon Capers
  • Juice of ½ Lemon
  • For garnish- spring onion/lemon/mint leaves
  1. Preheat the oven to 180°C
  2. To prepare the marinade for the fish, combine the olive oil, chilli powder, cumin, dried cilantro and ginger in a small mixing bowl
  3. Once combined, use a brush to marinate the cod fillet and season with sea salt and black pepper
  4. Dust some corn flour over the top of the fish and bake in the oven for 10 to 12 minutes
  5. For the sauce, heat up the butter in a pan, add in the capers and lemon juice
  6. When the fish is cooked, place on plate, drizzle the caper butter on top of the fish, garnish with herbs of your choice and serve hot
